After listening to Coyote, sempai's instructions, he closes his eyes and imagines himself as a toy being made in a factory, he examines his whole body starting with his head, slowly looking at every feature and detail as he's releasing doton chakra,he then imagines his neck torso arms legs toes and fingers, making a clone of himself out of stone, making sure the clone is an exact replica down to the last chest hair.
As the stone clone falls apart, he focuses harder visualizing every aspect of himself and transfering it into stone, causing the stone to take shape. As the stone is taking shape it looks more and more like himself, while he exerts a steady amount of chakra into the stone until it successfully becomes a perfect clone.

I've learned by manipulating the ground, rocks and dirt with my chakra, im able to create defenses and offenses, virtually anywhere. With my recent learnings of the Earth element, i've learned that Earth techniques are weak against Lightning based techniques and are strong against Water based techniques. Elemental advantage of Earth against Water is when you use say a Earth jutsu that's B rank and your opponent uses a Water jutsu that's B ranked. Water is weak to Earth therefore Earth has an elemental advantage against Water meaning that if B rank Water Vs B rank Earth is to occur then because of the elemental advantage, the Water jutsu is now C rank basically. Elemental advantage gives your jutsu a 1 rank advantage, that's it. So, S rank wind could defeat B rank Earth as an example. However A rank Earth Vs S rank Water, they would clash aka cancel each other out. Earth and Fire can be combined to create Lava, Earth and Water combined can create Mud and Earth and Lightning can create Blast, all in which are specialties of those with a certain KG. Earth based techniques can also be the quickest defense to an attack due to it being our everyday surroundings besides water. Masters of the Earth element are known to originate from Iwagakure. A few examples of Earth users, Onoki, Hiruzen and Kitsuchi, amongst others.
In a situation where the Opponent is using a rank A water jutsu, Im able to defend against it with my B rank Earth defense

If the Opponent would have used a A rank Water attack against My B rank Earth defense, the attack and defense would have canceled each other out.
Also, if the the Opponent used an S rank Water attack against my B rank Earth defense, My defense would have been beaten by the Water but the Water would also become weakened.
Attacks and Defenses can also be used in unison with other jutsu to make the jutsu stronger. For example if a person were to "combine" two C rank jutsu it would make the attack/defense a B rank.

The Opponent throws a few blast tag'd kunai towards Itachi, Itachi focuses earth chakra into his palms and places them against the the ground quickly raising a half domed shield in front of him protecting him against the oncoming attack, as he immediately raises his hands to perform two hand seals and then placing his hands back against the ground releasing more earth chakra into it causing the ground to rapidly under the opponent to rapidly spiral inward on itself. While Itachi stands back up he performs a single hands seal causing sections of rock around the opponent to combine forming to slabs of gigantic rocks, crushing the opponent.

yea its a defense that why you need to find a way to vercome it. It blinds the conjurer so you can quickly use a sneak attack.
And as for scenerio, you can't possibly see your opponent's position when you do the dome except you have sensory or doujutsu, so you doing those jutsu is just on mere instinct on where your opponent might be.
