Oh my god so much to read. I'll try to respond, and btw good effort whether right or wrong.
Why Itachi could win against the Second Tsuchikage ?
1) On the other hand, Itachi must see the second in order to hit with Amaterasu, so this may not work out due to the latter's invisibility tech. Furthermore, since the second can fly, Itachi can't merely burn a huge area and hope to hit Muu.
2) Yata mirror can only defend against attacking coming from the front. If Susano'o is trapped within a large Jinton cube, the shield won't matter as it will be 'hit', for lack of a better word, on all sides, in every possible direction. I can't grant this.
3) Muu can go invisible, making both eye contact and finger genjutsu next to impossible to land.
Itachi, like anyone else, would have a very hard time against Muu. In fact, I think Muu would be one of the best counters in Naruto against Itachi. I'd give the win to him.
Why Kisame could defeat the Second Hokage ?
1) Yes
2) Also true, though I imagine Tobirama would try and use space-time techs against the absorbing shark after having his other attacks sucked up by samehada.
3) Pretty much, I don't think even Tobirama can breathe under water.
I'd give the match to Kisame, agreed.
Why Hidan would be able to Defeat the Fifth Mizukage?
1) I disagree that Hidan is immune to boil and lava release. Both have been shown to be capable of melting Susano'o. Both could melt the flesh off of Hidan's bones, rendering him completely immobile and thus finishing the fight just as effectively as cutting off Hidan's head. I also disagree that Mei's fighting style is not suited to fighting Hidan; she specializes in mid to long range attacks, which are perfect for fighting while staying out of Hidan's melee range as to avoid getting cut.
2) This is true, though as I mentioned above Mei as a mid-long range fighter stands a fighting chance of keeping Hidan at bay.
3) Mei's attacks cover large areas; dodging them is difficult. In particular, Mei can blow out a massive cloud of acid mist then stand in it, taking no harming while Hidan can approach without being melted. Or, she can use the hidden mist technique to get out of melee range, then resume fighting. However, I agree that Mei is not as capable at melee range as Hidan, and if he can get that close and stay there, Mei will lose.
I feel that Mei is well-suited to fighting Hidan, and crucially, she can finish him off. I'd give the fight to her.
Why Deidara could defeat the Fourth Hokage ?
1) Yep, while Minato is intelligent and may be able to figure it out, I doubt he'd do it fast enough to avoid breathing any bombs in; especially if Deidara surprises him with it. Also, once he inhales the bombs it doesn't matter if Minato teleports away. This is a good point.
2) Agreed, Minato's usual FTG blitz dance won't happen against Deidara, cutting significantly into his offence and defense.
3) While what you say is true, every single character deidara has ever fought had little trouble dealing with the homing bombs, including Kakashi, Sasuke, and Onoki, so I don't think Minato would be much troubled either.
It could go either way based on Minato hype, but until he demonstrates that he can either deal with C4 or win before Deidara whips it out, I'd give the fight to Deidara as well.
Why Kakuzu could defeat the Second Mizukage ?
1) Agreed 100%
2) Agreed again, though I'd be very surprised if the second couldn't find a way to break through eventually. I should also note however that Kakuzu can't go into tentacle form and do this at the same time.
3) Good point, I doubt that those things are complex enough to be able fall for genjutsu.

Why Zetsu could win against the Fifth Kazekage?
1) Nobody seemed overtly drained by the spores at the five kage summit, and obviously not enough to stop them from using techs. The fact that most everyone, including Onoki's fat student managed to get these things off makes me doubtful that Gaara wouldn't be able to do the same. Exploding his sand armor off comes to mind.
2) While this is true, Gaara's attacks can cover large areas. He is fully capable of killing the main zetsu along with any clones if they get caught.
Zetsu clones only take on appearance and chakra signature; they have never been shown using new abilities. That point is based on speculation.
I don't agree here; zetsu is simply much weaker in the manga than you made him out to be. IMO Gaara, along with many other ninja, can win this. On the other hand, if both black and white zetsu fight, they would do better.
Why Konan could defeat the Third Tscuhikage ?
1) Onoki should be able to turn the paper to stone, so I don't think he'd be restrained so easily. However, you're right that the clones would be hard to deal with.
2) Agreed, Konan doesn't form a single target for Jinton
3) I'm not entirely sure about this. It really depends on just how good paper clones are at fighting, which we haven't seen enough of.
I'm on the fence about this, leaning towards Onoki. However, we don't have enough info on Konan to say for sure, so I could be wrong.
Why Nagato would be able to defeat the Third Hokage ?
1) Pretty much, based on what we've directly seen Hiruzen can't break out directly. However, if he really did know all the techs in Konoha, then he should have known some space-time techs, especially since he personally knew Tobirama. There is a chance that Hiruzen can teleport himself out of chibaku tensei's pull.

1) Muu cannot be detected by seeing his chakra, he has no chakra presence while invisible. For that reason, not even sensors can detect him. Gaara's sensor sand is pretty much one of the only ways you can detect Muu, by having him physically touch something. As for the other points here, I talked about them above.

Even if Mei does underestimate Hidan, she would still do her best to keep him at bay and attack from range. She is a mid-long range fighter, so she has no reason to allow hidan to close that distance.
7) Again, spore tech doesn't drain as much chakra as you say, nor have zetsu been shown using abilities they've copied.
