He was caught of guard by Itachi. He did not know Itachi was such a powerful genjutsu user. Now he does and Itachi will not beat him.

Uh, he knew he had the Sharingan. Orochimaru wasn't caught off guard; he was the person planning to attack him. If anyone should of been caught off guard, it's Itachi. But he wasn't, and the so-called Legendary Sannin got his ass handed to him by a 14 year old.

In their little 1vs1? Perhaps. But not with the other 2 edos around. You see when Orochimaru was paralyzed by Itachi he immediately realized that he was in a genjutsu, And he's able to talk whilst being in the genjutsu, So one of the edos can break him out or attack Itachi to break it.

I know that Itachi has numerous ways to counter but def not lowdiff.

Yes, but even if he does know it's Genjutsu, his arms are restricted. It would take him a bit to perform the necessary hand seal(s) needed to break the Genjutsu, and in that time Itachi should be able to seal him.

Current Hashi-Oro w/ both edo Asuma & Hizashi? I don't really see Itachi taking this.

Having Hashirama DNA doesn't mean you can use the abilities it has the potential to grant you.

Feats on Orochimaru? Asuma and Hizashi are fodder.

Nothing implies they can fight while looking at the feet. Pretty confident that they said not "everyone can do it like you Gai" considering it requires practice, or being a sensor. Orochimaru cannot execute this either way, he will have to look at Itachi's body leading to finger genjutsu, crow genjutsu, or 3T/MS genjutsu.
