You are Being Very one sided.

The Way you are making it sound is that Jman even with Sm is just a Fodder Ninja that Itachi can Beat with No problems.

Also Both times Oro got Owned by itachi was Due to Lack of knowledge on Itachi, First time he underestimated Itachi and his powers with Genjutsu. Second time He had No Idear that Itachi had the Totsuka sword.

With Full knowledge of Itachi's and his Genjutsu, Susanoo + weapons i Highly doubt Oro will allow himself to be Beaten so Easily again. but Ofc in a 1v1 even with knowledge i still think Itachi would win, Unless Oro uses Edo.

Jiraiya in sm is no doubt a strong ninja, but his feat in sm still wasnt impressive. If it wasnt for the frogs genjutsu, he wouldnt have been able to kill those 3 peins. Thats what alot of people seem to forget when they say jiraiya killed 3 peins.

The way i see it even in sm, itachi would beat him with mid difficulty.

As for itachi vs oro. Even if oro knew everything about itachi, he would still lose. Just because you know your opponents techniques doesnt mean you can avoid it.

Just because someone has been showcased more then another character doesn't make them the victor, side characters have more feats then Minato does but we all know that he can most likely win against them, and Kisame having more impressive battle feats is just a matter of opinion.

The thread says they are fighting in the Sannin battlefield, which is kind of vague because I don't know what that looks like lol But lets say there is a pond or something, Jiraiya can easily adapt to that terrain with his toad summons, and being in SM, Kisame would have to be cautious about absorbing his chakra because we all know what happens when you take in natural energy without being used to handling it.

As I said, whether you think Jiraiya's battle feats are less impressive then Kisame's is a matter of opinion, I will reread both fights in the manga to get a better idea of each of the fighters, but I really don't see Kisame doing much to Jiraiya considering his main source of power comes from Samehada, which is practically useless in absorption because he can't absorb sage chakra.

And also, you did skip the fact that Jiraiya can easily adapt to water terrain just as good as Kisame can using the toad summons, so no, the battle would most definitely not be the same as it was with KB, and plus KB was also trying to protect his master, without that distraction KB would most definitely have won.

Infact the longer the battle continues the higher chance of jiraiya turning into a frog, because his chakra will decrease in proportion which his ninjutsu's and when his chakra is low, he risks the natural energy overpowering the little chakra he has left. Then again he would know this and wouldnt stay in sm mode forever.

Kisame on the otherhand can fuse with samahada till the end of the fight. Also im not sure where you got the idea that jiraiya can adapt to water terrain just as good as kisame. Let me as ask you this. Can jiraiya breath underwater?.

Ma and Pa will be simultaneously be molding his chakra and utilize it for sage mode and harness natural energy, so that's out of question. Remember the fight between Jiraiya and Pain, and how long j man stayed in sage mode without expressing any lack of stability or fatigue.

And jiraiya has an element affinity advantage over kisame, for earth>water. hell of swamp will reverse the water jutsus used by kisame, plus if jiraiya has an affinity with toads then he can adapt to the water terrain. remember when j man killed the animal path using the prison guard toad underwater by sucking him up and assassinating him stealthily? he can summon toads to use a mobile base underwater, and suck kisame up and kill him like he did to the animal path
