This jutsu has a number of benefits: Apart from being a very powerful attack that can stretching to long range, it can be ridden like a wave allowing for the user to move quickly across the field towards the opponent. This jutsu is quick to use (one handseal) and also leaves a large amount of water behind for use in other jutsus later in battle. The only weakness I can think of is being quite vulnerable if you choose to ride on top of the wave, as this would increase the difficulty of evading or countering a other jutsus. I would personally defend with a earth shield, but would use a quick lightning jutsu before hand if the user was riding the wave.
B) (Suiton: Gufuu Suika) - Water Style: Typhoon Water Vortex
*I begin by building my suiton chakra in my right hand and my fuiton in my left. Once ready, I form a Wind Style: Rasengan (left hand), and Water Style: Destruction Torrent (right hand) and bring my hands together to create a huge spinning vortex of water infront of me. I then push it forwards as an attack towards my opponent.*
This jutsu is very powerful because it combines the sharpness of the wind with the power of the water to be a very difficult attack to counter or defend against. It also doubles up as an excillent defence, as the water can absorb alot of an attack while the rotation due to the wind, thins the attack. This justu is limited to Mid range and im guessing will need the user to have actually have learnt "Wind style Rasengan"...which i haven't :'( . Personal counter, Hide like a Mole![]()

Both of your defences aren't really good imo, but that can be because you haven't learned the jutsus that I would use as defence yet.
For the first jutsu your way of thinking is right, but you need to think about the amount of water used in the wave. If you would for example use one single wall of earth the amount of water would destroy it or get around it and hit you. I would rather use something like 'Fire Release: Wind and Fire Blast Technique' to evaporate the water until there is a bit to nothing left. Otherwise you could create a huge hole in the ground where the water would fall in, or go underground yourself, if the opponent does not see you or many other things
For the second jutsu you said you would use the Hide like a Mole technique. It would be good for avoiding it indeed, but the opponent would probably be able to see, which would give you a disadvantage. I would rather use a wind and fire combo, for this would neutralise the wind/water combo.

*I walk over to the lake while building my suiton chakra. Once ready I concentrate my chakra and form 4 sharks from the water around me. These sharks rush towards the enemy at high speeds and knocks them into the air.
This jutsu is a very powerful suiton attack that also launches multiple projectiles at once. This jutsu also ends with the enemy being knocked into the air, allowing the user and excillent chance to attack. This jutsu however is limited to short range and requires and existing water source. Best used combined with a quick projectile jutsu to be launched after the sharks have made the enemy airbourne.
(Suiton: Kyojin Nami Shougeki) – Water Release: Giant Wave Crash
I start by concentrating my suiton chakra while gathering a large volume of water, more then normal. Once ready I send the water crashing into my opponent.
This justu can be used upto long range and seem quite quick to use. However it doesnt seem like it can be used effectively in conjunction with another jutsu. Best used as a counter to fire projectile (large volume of water would have a large surface area.
In the resulting mist I would use the opportunity to conseal myself "chakra supression" and then strike with a quick raiton projectile.Good, now, your opponent is blocking your fire jutsu with the water wall. What will you do to attack him?

Well, since they can see through the wall of water it is probably best if you do something without handseals and something that is fast or attacks them from where they do not look, thus above of beneath. Like you said, spikes of earth could help, but you could also use that lightning jutsu where you send an electrical essence into the clouds that allows you to make the lightning strike from above. Due to them being surrounded by water they will probably get some water under or on them, making lightning jutsus more effective. Though it really depends on the situation. o.o

a con for the second jutsu could be that the area you are at will be covered in water, thus leaving you more vulnerable for lightning jutsus.(Suiton: Mizu no Tatsumaki) - Water Style: Tornado of Water

This justu is an excellent defense and great at knocking a close range fighter away. The water that surrounds the user can then be used to form other jutsus. This justu however is limited to short range and would block the users view of an opponent.

From this water I focus on makeing a giant wave that will crash down onto my opponent. Once my opponent has been hit I focus on the same water to form an orb around my opponent, trapping them with no air.*
This justu is very good for a number of reasons. It is powerful, creates a large surface area for an attack, leaves water behind to be used later and in essence is two attacks in one as the water forms an orb around the opponent at the end. It isnt even limited by range so I cant think of a "con" for this jutsu ^^

*I begin by building my suiton chakra to form a shark that emerges from the water and engulfs my opponent and drags them down into the water. Once under water I gather more chakra and form more sharks around my opponent that strike them from every angle*
This jutsu is again two attacks in one which makes it very powerful. Once the opponent is under the water it will be extremely difficult for them to escape. This jutsu is not limited by range but does require that the opponent is standing on a water source.
(Suiton: Gobo Shukusame) – Water Release: Burdock Root Eating sharks
*I begin by focusing my suiton chakra and forming a piller under my opponent that flings them into the air. I then form sharks from the same water that fly up to devour the opponent before imploding and sending the opponent into the air again. The remaining sharks circle round the opponent and impale them.*
This jutsu has several different stages making it very difficult to counter. With each of these stages the opponent is juggled around allowing for alot of opportunities to deliver a fatal blow. This jutsu also requires a water source and needs the oppone.t to be stood on a water source.
