I would personally defend with a earth shield, but would use a quick lightning jutsu before hand if the user was riding the wave.

*I begin by building my suiton chakra in my right hand and my fuiton in my left. This jutsu is very powerful because it combines the sharpness of the wind with the power of the water to be a very difficult attack to counter or defend against. It also doubles up as an excillent defence, as the water can absorb alot of an attack while the rotation due to the wind, thins the attack. This justu is limited to Mid range and im guessing will need the user to have actually have learnt "Wind style Rasengan"...which i haven't :'( . Personal counter, Hide like a Mole :D

Both of your defences aren't really good imo, but that can be because you haven't learned the jutsus that I would use as defence yet.

*I begin by building my suiton chakra and channelling this into my hands. Once ready, I place my hands onto the water source (thanks for the heads up haha) and channelling the chakra into the water and form five sharks that i send speeding towards my opponent.*

This justu seems very quick to use and isnt limited by range. It also creates multiple projectiles which are difficult to defend against. This jutsu does require a water source however so would need to either use a pre existing source or use a Suiton jutsu to make one. I would personally counter this jutsu with Earth style Rampent.

*I begin by concentrating my suiton chakra while memorising the handseals.*

Rasnall: 'Tiger → Ox → Monkey....Rabbit → Ram...Boar?....Ox → Horse → Monkey → Tiger → Dog...Tiger → Snake?.... O_O"....Tiger → Ox → Monkey → Rabbit → Bird'

*Once ready I form the handseals 'Tiger → Ox → Monkey → Rabbit → Ram → Boar → Ox → Horse → Monkey → Tiger → Dog → Tiger → Snake → Tiger → Ox → Monkey → Rabbit → Bird', and release the suiton chakra out, up and spread it wide. Once at its peak I send the giant wave forward and crashing down onto where my opponent would be.*

This is a very destructive jutsu and covers the entire battlefield. It is not limited by range and due to the scale of the jutsu, is best used when the opponent is stagered or paralysed. This jutsu however does take a while to set up, due to all the handseals needed. I would counter this jutsu by...well im not sure? Im sure there would be an Earth jutsu that would be good but i havnt started the training so im not aware of the full range of jutsus....O_O " haha

This jutsu is a very effective defense as it provides protection to the user without restricting their field of vision. This jutsu can also be combined with (Suiton: Goshokuzame) - Water Style: Eating 5 Shark Frenzy, to attack the opponent with sharks while being protected. This jutsu however is limited to short range and is primerally a defensive jutsu.

(Suiton: Koukasuijin) - Water Style: Hard Water Spike

*I channel suiton chakra into my arm and envelop it in rotating water that stems from the shoulder to the entire chosen hand.*

This jutsu seems very quick to form so can be used during a cqc. This jutsu would also be very good used as a follow up on a trapped or binded opponent. This jutsu however is only useful in limited situations and would leave the user vulnerable to lightning counter attacks.

Good, now, your opponent is blocking your fire jutsu with the water wall. What will you do to attack him?
In the resulting mist I would use the opportunity to conseal myself "chakra supression" and then strike with a quick raiton projectile.

Or

Raise earth spikes from beneath them.

Well, since they can see through the wall of water it is probably best if you do something without handseals and something that is fast or attacks them from where they do not look, thus above of beneath. Like you said, spikes of earth could help, but you could also use that lightning jutsu where you send an electrical essence into the clouds that allows you to make the lightning strike from above. Due to them being surrounded by water they will probably get some water under or on them, making lightning jutsus more effective. Though it really depends on the situation. o.o

a con for the second jutsu could be that the area you are at will be covered in water, thus leaving you more vulnerable for lightning jutsus.

This jutsu is again two attacks in one which makes it very powerful. Once the opponent is under the water it will be extremely difficult for them to escape. This jutsu is not limited by range but does require that the opponent is standing on a water source.

(Suiton: Gobo Shukusame) – Water Release: Burdock Root Eating sharks

*I begin by focusing my suiton chakra and forming a piller under my opponent that flings them into the air. (Suiton: Mugensame)-Water Style: Infinite Shark Frenzy

*I begin by building my suiton chakra to form a shark that emerges from the water and engulfs my opponent and drags them down into the water. Once under water I gather more chakra and form more sharks around my opponent that strike them from every angle*

This jutsu is again two attacks in one which makes it very powerful. Once the opponent is under the water it will be extremely difficult for them to escape. This jutsu is not limited by range but does require that the opponent is standing on a water source.

(Suiton: Gobo Shukusame) – Water Release: Burdock Root Eating sharks

Focus your water chakra and perform the 'Tiger – Serpent' handseals. Then create a gigantic shark of water which is far larger than you. This shark will attack the opponent and can absorb chakra to grow larger and more powerful.

(Suiton: Senijikizame) – Water Release: A Thousand Feeding Sharks

Focus your water chakra and create one thousand sharks of water which will enter a wall-like formation and attack the opponent from there.
Note that you cannot use this jutsu before you become Kage, though I can teach it to you now so that you don't have to learn it when you are actually kage.
