Even if you make the argument that he was using Croc.'s weakness at that time it doesn't make sense since Luffy used it again during MF. I agree that Zoro would win but to say "fodderize" Crocodile is pushing it. Crocodile has been to the NW world before or at least it was implied.

No re-read the manga again. The hook is going backwards when Mihawk's yoru remained in a standstil which proves it's Mihawk who blocked the hook to go backwards. If you see the complete page you'll even notice that Mihawk noticed Crocodile's presence beforehand. He noticed him coming and blocked him. It's what happened. Mihawk's stance also prove that. His hands are sideway(as well as the sword) in order to deflect Crocodile's attack. And no, Doffy just wanted to ally with him. He knew Crocodile was a logia, that's why he cut him without haki. If he was really pissed he would have used haki and we'd have had a dead Crocodile

He blocked nothing on Luffy gear second. Luffy just deflected his hook, nothing more. Like i've said the only feat worth arguing is the Jozu tanking thing but it's only arguable. Depends on the amount of strength Jozu was using in the attack

I doubt he was joking/exaggerating. Why would he even mention that he was teaming up with WB? So many questions, I'll just wait till it gets explained. I'm sure it either has to do with his strength or something to do with the knowledge he had when he was ruling over Alabasta.

Mihawk swings his sword back and jumps toward Luffy (middle panel), as he was swinging his sword at Luffy, Crocodile intercepted him (last panel). It's pretty evident that was it happening by just looking from the middle panel to where they clash. There's already exclamation marks near Mihawk, indicating that he was surprise. Also, don't deem the anime as being terrible or something not credible. It's not like we're talking about a censored scene. The anime followed MF quite well, aside from the censorship ofc, so it's okay to use it. I'm not saying all this stuff to insult you either, just reminding you to put your biases aside in a discussion.
Oh and by the way considering i'm tired to explain all the false feats you people are giving to Crocodile during that war, i invite people to read this thread:

Either way, Monet herself who showed that capacity(she can mix/manoeuver with the entire environment of snow) never managed to surprise him, so i don't think that even if he could, it would work/worth it. Observation haki will always help him to find his target just like it helped him to always know Monet's location even when she was mixing herself inside her snow environment and he would get one shoted like a fodder he is

Nah. Zoro leaps into the air at the very same moment he transforms and blends into the ground. He isn't nowhere, Crocodile now is the span of the desert, his conscience is part of the entire thing. A move like O Tatsumaki in the opposite direction, a way for it to spiral downwards is more than enough to defeat Crocodile, bonded with the desert or not. A launched Sables, a launched Spada, means nothing, because the constant slicing of the O Tatsumaki and the pain would make Crocodile pass out. He's leagues below Zoro and his attacks.
The Spada to Akainu did nothing. He transformed on reflex. Akainu did the same with explosives, both Rob Lucci and Bartolomeo survived those with no problem, so it shows Akainu doesn't transform because he absolutely needs to, his body just does.
This strategy wouldn't work for Pica he doesn't BECOME stone, he can assimilate it, which is basically Earthbending. If he merges with his golem, and someone attacks the golem, he doesn't feel the pain because the golem doesn't become part of him, he just covers himself with stone and can ¨Earthbend¨ it.
