I'm a major fan of cooking, and I love sharing food ideas with other people.

Here is a simple, but delicious pasta recipe:

You need:

500g pasta
1-2 fresh red chillies (depends how spicy you like it), finely chopped
2-3 cloves of garlic, finely chopped or crushed
1/2 dl olive oil
500-800g greek feta cheese
a bundle of fresh & chopped basil leaves (about as much as you can fit in your fist)
a bundle of fresh parsley, chopped (ditto)
3 (large) table spoons of green pesto
salt & pepper to flavour

Procedure:

Cook the pasta in a big kettle.

When the pasta is nearly ready cooked, heat the olive oil in a pan, on low heat. Add the chopped garlic and chilli to the oil, and let it simmer for a few minutes. Turn the heat off before the garlic turns brown.

When the pasta is cooked, drain the water. Add the oil with chilli and garlic to the pasta. Add feta cheese, herbs, pesto, and salt and pepper.

Voila! Very nice with some greens as garnish, perhaps fresh spinach, or watercress. Yummy!!

Halo Halo Ingredients:

* Pinoy Halo halo 1 ripe large banana
* 2 ripe mangoes or 1 cup canned ripe mango
* 1 cup firm gelatin set into gel and cut into 1/2-inch cubes
* 1 cup canned ripe jackfruit
* 1/2 cup sweet corn or chick peas (garbanzos)
* 1 cup young shredded coconut, fresh or canned
* 1 cup cooked sweet yams or (ube halaya) glutinous purple yam, cut into 1-inch cubes
* 2 cup shaved ice

* 2 cup milk
* 4 scoops of favorite ice cream
* 1/2 cup chopped peanuts or rice krispies

Halo Halo Preparation Instruc

* Pinoy Halo halo Ingredients Peel mangoes and slice the meat into 1/2-inch cubes. Discard the seeds.
* Prepare 4 tall glasses. Divide each ingredient into 4 equal parts.
* In each glass place 1/4 of each ingredient, adding layer by layer starting with corn or chick peas, cooked sweet yams, jackfruit, bananas, coconut, and gelatin.
* Top with 1/2 cup shaved ice.
* Pour 1/4 cup milk over shaved ice and top with a scoop of ice cream.
* Sprinkle nuts or rice krispies over it.

NOTE: Individual persons may eat as it is or mix the whole concoction before eating. Some of the ingredients above, such as corn or fruits may be substituted with cherries, crushed pineapple, papaya, or any other ripe fruits in season.

Pasta:
3 cups flour
pinch of kosher salt
4 large eggs

Put a mound of flour on the bench. Make a well in the center. Put the eggs and salt in the well. With your fingers, break up the yolks, and slowly mix in the flour, gradually incorporating it into the eggs. Knead by hand for 10 minutes, or 6 minutes with stand mixer and dough hook. Form into disk. Cover and rest for 15 minutes. Cut disk into 4 pieces. Roll out. Cut.

Pesto:
2 cups frsh basil
~1/2 cup parmesan or ramano
~1/2 cup evoo
1/4 - 1/3 cup toasted pine nuts
3 large cloves garlic
salt
pepper

Put the garlic and pine nuts in a food processor, and pulse a few times. Add the basil and cheese. Pulse a few more times. Add the evoo. Pulse a few more times. Salt and pepper to taste.

Start by taking a knife and use it to butter the sandwiches. Extra: Then add the piece of ham on top of other piece and add the piece ( without ham ) on top of the ham so that the buttery side will be touching teh piece of ham. :|

Serves 4-5 pax
• 1kg of Chicken (preferably whole chicken cut in to medium size pieces / or a equal mix of thigh, drumsticks, and breast filets)
• 2.5 -3 tea spoons of Cumin seeds
• 2 – 3 teaspoons of black pepper corns
• 2 – 3 medium to hot green chillis (According to taste)
• 2 peaces of 2-3cm lemongrass
• Roots and Stems of 1- 1.5 bunch of fresh Coriander (If you find it hard to get Coriander Cilantro will do the trick)
• ¼ teaspoon of fenugreek seeds
• 2 cloves
• 2 pods of cardamoms
• 2cm stick of cinnamon
• 5-6 medium size cloves of garlic
• 3cm piece of ginger root
• 2 tsp Sweet paprika
• Salt to taste
• 4 tbsp of light soya sauce (Japanese or Thai style “Kikoman”)
• 4 tbsp of Oil (What you use is up to you doesn’t matter really, but I recommend extra virgin olive oil or good coconut oil)
Method:
Cut and wash the chicken, and put it in to a mixing bowl big enough so you can mix things. To this add Sweet paprika, salt and soy sauce to marinate the chicken; leave this aside (preferably leave for about 15 -30 min, which will give you time to make the spice mix)
I hope you have a grinder, food processor or at least a motor and pestle; we’re going to crush everything that’s on the list together in to a nice pulp, start with the dry ingredients and finally add the raw ingredients, finally to give a bit of texture at 2 tbsp of the oil to the mix and grind again (All this should be a nice flakish texture like when break a fresh valithalapa or pittu, not really puree; the mixture is sort of dark greenish in colour).
Take the mixing bowl and add this mixture to the chicken coat the pieces well, set that aside and heat the oil until it’s smoking in a pan or a wok with a lid and add the chicken, now what we need to do is to seal the chicken, turn the pieces well and make sure it’s all evenly browned, add about 1-2 cups of water to the wok/pan and close the pan, when the dish is boiling which will take about 5 mins stir and mix it well and cover the pan bring flame to medium heat and cook for about 20 mins (make sure you ster it from time to time) check the seasoning and correct it if you need to at this point (after the 20 mins), bring the heat up again, and cover the pan and cook it (10 mins) but again remember to stir it otherwise it’ll get charred, at this point (after the 10 mins) you can do another thing if you like, heat the oven to 250 C, transfer this to a oven safe dish or pan coarsely break some coriander or cilantro leaves and put this in pre heated oven for 10 min, this will give the dish a roasted chicken feeling.
That’s it.
