Why did Kabuto cut Itachi?

Kabuto is the best to know that physicals attack wont work on Edos, so why did he actually cut Itachi? There were only two options:

1. Itachi does his crow-thing and comes from behind
2. Itachi gets cut, but it doesnt hurt him and he regenerates very fast and could have done an counter attack at hoc.

So what do you thing is Kabutos plan?
Just look at Kabutos eyes, they look more like he has a Plan and not like he got trapped in a genjutsu.

EDIT: I think it has something to do with his horns. Maybe they are toxic for edos xD

I mean Itachi is smart, but Kabuto is very smart too. They actually try to figure out the opponents move, before even doing something. Much like chess.

Well, he intend to slow itachi down so he could control him again.
He shocked when itachi turned to crow, that's proof that kabuto plan failed, itachi is too genius for him

I think while regenerating edos freeze. they were all sealed while regenerating. kabuto probably thought of catching sasuke while itachi was regenerating
