Considering their relatives, their background and history, I'd say hype is well deserved.
Sharingan Precognition: Sharingan gives you the ability to predict movement the moment it is initiated, allowing you to plot and intercept it with ease.
Amaterasu: Sharingan gives you the ability to release of burst of undying flames with the blink of an eye
Genjutsu: Sharingan gives you the power to capture an Enemies mind in an instant, altering their sense of sight so that they see and feel what you want them too.
Susanoo: A nearly impenetrable armor that reflects almost all physical attacks, varying in different large shapes and sizes.
Thats a rudimentary list of abilities alone, not even mentioning those related to the Uchiha, like;
Itachi: Who developed elite skills and mastery at a very tender age. Who laid waste to a powerful clan of the renowned Uchiha. Whose Susanoo possesses a sword that can absorb and seal an entity, and whose shield can reflect all ninjutsu. Izanagi and Izanami (nuff said').
Madara: The first to show the "Perfect Susanoo" The last stage of an already powerful armor. He took control of the nine tails, and wrapped his Susanoo armor around it, therefore amplifying his already perfect and powerful Perfect Susanoo, that without the nine tails could already cut multiple mountains like they were flowers.
Shisui: Who could control any being without them even knowing they were being controlled.
Sasuke: Karin, CM2, PS and a lot of other abilities got him his hype. The general way he way he was portrayed in the anime got him his hype.
Obito: I don't even feel like listing everything anymore, you get the idea.
And on top of all of that, they're the direct lineage from an extremely powerful clan called the "Otsutsuki", who Kaguya was apart of, Kaguya the goddess of Shinobi.
Even if there were clans better than the Uchiha, even if Uchiha was the weakest and worse clan ever, given everything they're capable of, I would definitely say Fan hype is due.
We only wish we were capable of the things Uchiha pull off. Same for the Senju and Uzumaki, and Otsutsuki.
Even if you still want to argue "They're over-hyped", I would only say that given everything listed above, they deserve to be over-hyped.
It's not like people are going around just over-hyping people who don't deserve it. If Uchiha are being hyped so much, then theres an (obvious) reason. Not saying the Senju are weaker and don't deserve to be over-hyped. Just saying that the Uchiha earned this through all their capabilities and the characters who are Uchiha.
