Saying "Never" is Incorrect. To say that Minato has never been defeated even as a child is kinda hard to believe. Also we haven't seen everything he can do, but people assume he must be the best shinobi ever. Itachi, I'm not saying he isn't strong but he is being hyped up, therefor he is being overrated. What we have in the manga is the basis for our Judgement.

We have seen over and over that Itachi outsmarts his opponents, keeps his head cool and defeats his opponents (He died on purpose vs Sasuke, that was his master plan to "fix" the Uchiha problem with the Hidden Leave). Itachi has never been defeated in the manga. I don't see him being "Hyped up" unless people claim he is stronger than SO6P and Madara Uchiha.

About Minato you are right, we don't have enough fights with him to make accurate judgements, so the "hype" about him might be unjustified, we can't tell for sure untill we see more of him, but from what we have seen, he has outplayed both Madara and Raikage and sealed the 9-tails.
