Death wouldn't save Itachi.
Shisui was dead and Obito was supposed to be dead. If Kishi wants Itachi back, he's going to come back.
Well, Kishimoto already brought him back and it made his character even better. (Closure with little bro, see how his past went down that night, apologize for mistakes and wrong doings, help by stopping edo tensei/redemption, more connections with characters, etc).
If you mean a 3rd time... I don't know how that would go. I've seen some people on 2ch suggest that was what Kishimoto
might be aiming for since with Obito's case- Rin made an appearance & Shisui being the villain could mean Itachi would once again get present screen time in the series. However, that's not needed.
Even so, I'm not worried. Kishimoto and his editors know how extensive Itachi's fandom is, I doubt they'd have the guts to troll him in a sincere manner. It looks more like they have fun encouraging fans and that the mention of him in this manga is more of a fan service if anything.

Rin wasn't as close to Obito as to be a sibling figure. She was his crush.
However, I see what you mean. Rin was his ray of light, the only person to avidly support him. But even so, Kakashi chose to support him in the end as well and Minato was always there. And Rin was quite oblivious to Obito's true feelings towards her. :/
It was also revealed quite some time
after Obito's reveal as Tobi and his famous line "It's because you let Rin die", so it was harder for people to sympathize since we didn't know their bond from the start.
