Itachi was capable of fixing the outcome of the fight (by predicting whether or not Sasuke could evade and survive each one of his abilities) Not only that, but he was in a weaker state than usual because of his illness. And also he had the intent to lose.
Considering that Hebi Sasuke took down Deidera high difficulty, and Itachi owned Deidera on there first encounter. I don't see any version of Hebi taking down Itachi.

Not only that, to clear things up Hebi became Taka a bit after he learnt the truth. And MS Sasuke has been around up to the point where Sasuke awakened EMS. And, the more Sasuke used ms the more Sasuke became proficient with it. So, in terms of dojutsu MS Sasuke> Hebi.

And finally, considering how well Itachi did against Hebi Sasuke. And MS Sasuke could use Susanoo, and he didn't have an illness which nerfed his use of it and (his use of other abilities). I'd say Hebi Sasuke could barely do anything against MS Sasuke.

And if you were to bring up that "manga logic". A lot of what I said has happened and is "legit".
