Block =/= damage. Its different thing. After Sakura extracted Sasoris poison from Kankuro, she didnt just heal him with med-nijutsu, antidote was required.Also those "blocked" signals would count as damage to the body. Any change from the bodies original state is deemed as damage.
Sasori is on whole different level compared to Chiyo. Sasori made himself into a puppet and could control 100 puppets at once. He had whole power of the most powerful Kazekage to his disposition. His poison was so complex that Chiyo was helpless against it. Sakura managed to made antidote for it, but she had to extract, analyze the poison and then make antidote from precise ingredients in laboratory. Doing something like during a combat is simply impossible.Lastly, this battle has kind of been decided by the past, Tsunade has had the perfect training to face against Sasori as she was known to have fought against Chiyo plenty of times during the 2nd shinobi war, she was even said to counter Chiyo's poison.
