The logic and reason behind it says this: If there is every a case regarding of uncertainty in a Jutsu then what Cannon say's goes.
Amaterasu may not be as hot as the sun buts it's actual temperature is still uncertain. Since we are uncertain of it's actual temperature and thefore cannot place figures on it as that would be an assertion then what Cannon (the databook) says ALWAYS triumphs and it is therefore as hot as the sun.
There in his statement fails proportionally because Amaterasu is not as hot as the Sun.

Manga feats show that it can't be as hot as the sun, so there is no uncertainty on that subject. What your example addresses is:
"How hot is Amaterasu?"
But I never asked that question nor do I care. Can you understand this? Or do I have to make it even simpler than that.

The number of Jutsu Hiruzen has is still uncertain. Since we are uncertain about the number of Jutsu he has we therefore cannot place a figure on it as that would be an assertion. (Interjecting KG's Logic) Because Orochimaru and the Databook (cannon) stated that he knew all the Jutsu of the leaf; then that will always trump the uncertainty and Hiruzen has in his arsenal every single Jutsu of Konoha.
There in his statement fails yet again because it is impossible for Hiruzen to know every single Jutsu within Konoha.
No, it actually isn't. The only thing debatable is "What are the leaf's jutsu?".

The uncertain assertion that the Blunt-Sword cannot crush all defenses cannot be made because the Manga and Databook (Cannon) states that it crushes all defenses; therefore it can because what Cannon say's ALWAYStriumphs uncertain assertion.
The Logic here once more fails because it applies the No limits fallacy to the Blunt sword.
