Why would Orochimaru try to take his body again after such an incident?? To be honest, for a man like Orochimaru that was embarrassing and he knew that Itachi's genjutsu was far stronger than he expected. The only obvious inferiority between the two (IMO) is his ability to cast genjutsu.We cant really say how strong Orochimaru with completely usable hands was, but he still felt that he was inferior to Itachi. The simple fact he never again dared to take over Itachis body proves that.
And of course, hes no noob when it comes to illusions. Its just that Itachi is so skilled with them.

Orochimaru knew that Itachi was severly exhausted, he watched the whole battle after all.Also, after this we only seen Orochimaru once fully powered and even in a weakened state (low chakra & no ninjutsu) he was bold enough to face Itachi again.
