They simply hadn't been introduced yet. The point still stands:

there's no evidence that Minato used them in battle, ever.

He certainly didn't against Kurama, Obito, Bee, A, or against the dozens of ninja we saw him fight in the war.

Why ANBU? Because ANBU are personal soldiers of the Hokage.

And the Hokage has body guards that use Hiraishin seals (albeit not nearly as skillfully as Minato.)

Minato would win. Amaterasu would not work because Minato uses FTG and teleports away. Also, again with the FTG, he can easily avoid totsuka blade. And Yata Mirror? Minato could put a seal on Itachi and teleport to him while he's in susanoo and use an unexpected attack. Also note that Minato tanked a full power Kyuubi Biju-Dama. Also, Minato mastered the rasengan so if Minato lands a hit with his Rasengan or Flying Raijin Lvl 2 it would probably hurt. Also, compared to Itachi, Minato has SUPER DUPER Stamina that Itachi just can't compete with. However, you did not specify is Itachi is Edo Tensei or not. But IMO, Minato would beat Itachi Mid Diff.

He can't teleport inside Susanoo. There is only room for the user unless the user himself decides to make room.

Serious underation of Itachi's intellect if you're comparing him to a 13 year old Obito... honestly, If he knows Minato has seals on his kunai, and can teleport to them when they are on the ground, what's stopping him from teleporting mid air?

Not that he'd be tagged anyway. Logically, it would be easier for Minato to be trapped in genjutsu.

Since he has no knowledge on who Itachi is, so looking at is fingers/eyes would come first.

And since Minato isn't Killer Bee, it would take him too long to break the genjutsu.

Yata Mirror doesn't make ninjutsu ineffective, Yata Mirror makes nature transformations ineffective since it can change its properties to counter them. Fuinjutsu is not a nature transformation.

Anyhow, Itachi can't keep up Susanoo up all day, hoping that he can use it at the right time. He cannot keep up with Minato' speed.

He can't seal him into himself. The object that is going to be holding the sealed one needs to be placed on the ceremonial alter in order for the jutsu to work.
-Minato can't use the jutsu and be on the alter at the same time.
-Itachi can simply destroy the alter rendering the jutsu useless.

What scroll does Minato carry on himself? What scrolls are even capable of holding a human in them? Scrolls are only used for summoning people, sealing jutsu in them or for literary purposes. None.

What object? What object could Minato be holding on him that could contain a human?
