I'm not an itachi fan but you have to see it from both sides
So Minato isn't on the same level as J-man? if he isn't than he is probably above. I like your theory of how he thinks every jutsu has its weaknesses but listen he needed Bee and Naruto or he wud of died. As for Minato, his genius is at least as much as Itachi so he cud figure out his weaknesses as well. I see Minato winning this right?
Well I think that Minato would win in a fight if and only if Itachi's genjutsu did not catch him at the beginning.
If Itachi did not catch Minato in the beginning of the battle I can't see very many ways Itachi could beat Minato. Minato is too fast for the Totsuka sword and is way way too smart to try and rush Susanoo.

Plz read this carefully. Trust me it won't take more than 3 min and when you read the first couple sentences u wud know its legit.
Before i start to explain why I believe Minato wud win this I will say that Itachi is of course very powerful and near invincible himself and has his chances against Minato. But this is why I believe that Minato wud likely take this.-
OK first of all to people who say stuff like instant tsukyomi and Minato loses, u are wayyy wrong. To do tsukyomi Itachi must do MS first which takes a long blink, about 5 sec in the anime, so it is not so instant. (show me where he has done it instantly). Also the finger genjutsu he used on Naruto or the genjutsu he used against Oro was short ranged along with all of Itachi's other genjutsu, u can look it up on Narutopedia or even tell by the manga. So this is proof he cannot instantly kill Minato and before u say that ask yourself if you really think Itachi cud take a kage like Minato (who is arguably the most powerful kage ever) in a couple seconds. Do u honestly believe this?? Anyways the instant bs is just dumb, I can fire it back at u by saying FTG instantly on Itachi and Itachi dies. Because unlike Itachi's genjutsu, ftg has no range. And is more instant than activating MS because a kunai can be thrown very fast and the first thing that comes to mind is to block right? Or maybe dodge but then again that still means he won't back up too far very fast and the kunai still ends up near Itachi and Minato pops up instantly surprising Itachi and then using his base speed to kill him from the close distance, or if Itachi blocks he can just pop out and kill him assuming Minato knows nothing about sharingan like some of u guys think then lets assume Itachi also doesn't know about ftg, and even though people who knew about it they were trained to run away even kage level shinobi because they didn't know how to stop it. Now saying Itachi wud activate a Susanoo is also bs because once again its an MS technique and he needs to blink for a couple secs to activate MS and he doesn't even have like .0000000001 sec. Now I know he blocked Kirin but he was in MS to begin with right? Not to mention if he doesn't know anything about FTG he wouldn't even activate susanoo on the sight of a kunai. And he wouldn't know that Minato wud pop out unlike with Sasuke who made it obvious he was going to attack.

So lets break it down simply how Minato has WAYYY more of an instant kill chance than Itachi has
1. Itachi genjutsu is short ranged and FTG has no range and is much faster
2. First instinct is to block or dodge the kunai which will get him killed.
3. He needs to know an attack is coming and also have MS ready to activate Susanoo.
SO now lets cancel instant killing for both sides. Now then, Minato cud spread FTG all over which takes no chakra and he can dodge all of Itachi's attacks, he was known as a genius so the chances of Itachi outsmarting him into a genjutsu are also not high at all. So then Itachi wud have to watch out for that FTG attack which he can protect himself with Susanoo. This takes a lot of his chakra and Minato can continue to spam ftg and dodge his attacks until he runs out of chakra and then Minato can kill him. SO now for people who say how is he gonna break susanoo? Well he doesn't need to, Susanoo itself cud break Itachi.
Now that I have explained clearly why Minato wud win plz try to understand it and good day I am done. And please don't respond by saying "fanboy" because that won't solve anything. Now that I am finished I wud like to end this message with the official Minato theme song.
The video was weird. I read it Ur whole post. Although, I can't possible know just How Awesome Minato was cuz he died young & there is not that much info on him(yet), I am sure he would be a good match for Itachi. When Naru finally gets to fight Sasu it will make u feel better about your theory.
