Itachi was able to take his shuriken out, create a water jutsu and an explosive clone almost too fast for Sharingan Kakashi to react, and switch places with that clone in one slick movement.

Don't forget that in the same time, Kakashi also managed to protect himself against suiton from Itachi with another suiton, use a mizu bunshin no jutsu, hide himself under the water and save Kurenai against the explosive clone that he managed to see and all that just in an instant.

But eventhough, you're right he was really fast, too fast for Choji.

itachi will have alot more trouble than people are saying. he can basically turn into a rolling 20 foot tank of death, and even enter butterfly mode which makes him a hundred times stronger.

The one's who say chouji will win this fight are obviously ignorant of Itachi's power. How would chouji get through his gen jutsu. Even in butterfly mode Chouji wouldn't win this.
