Itachi wins low difficulty.
He is much faster and more intelligent compared to Zabuza. Itachi outclassed part 1 Kakashi in their encounter while also man handling Kurenai. Zabuza managed to give part 1 Kakashi difficulties but for the most part, they were on the same level. Zabuza didn't have to worry about another jounin while fighting Kakashi unlike Itachi so not only did Itachi fare better, he also fought a harder battle.
This battle would probably end with genjutsu from the start unless Zabuza has full knowledge, in that case, he may still fall for genjutsu but even still, Itachi's MS jutsus in amaterasu and sussanoo will overwhelm Zabuza with ease. Silent killing is great and all but an attack coming at you directly can be countered if one has great reaction skills. Itachi has shown top tier reaction speed so he can dodge Zabuza's attacks even in the mist right before Zabuza strikes.
If Zabuza manages to slice apart Itachi, it would definitely be a crow clone which would explode. Zabuza may use a water clone to be safe but eventually, the real Zabuza will get hit.
A fire ball should be able to evaporate the water droplets in the mist although I don't think it can clear the entire mist and Zabuza can easily restore it. However, a fire ball would give Itachi an opening to beat Zabuza.

Zabuza > Itachi isn't an opinion, there on a whole nother level Itachi is literally six tiers above Zabuza. He'd amaterasu shot him before he even has time to do the hand seals for the mist.
