The girl I've been talking to for the past few weeks now is in love with me, but my feelings for her died out maybe because she's a bit controlling? Anyway, I want to move on to meet new girls and get new lovers. It'll upset her, but we're not official. How do I tell her that I like multiple girls?

Tell her you're not looking for a relationship, don't give more information than that. Note that you're not pushing her away from you while giving yourself room to date other girls. When you tell her what you want which isn't a relationship(and you can change your mind whenever you want), she will have to make a decision of either to pursue you or to look elsewhere but you're in a powerful position where you can only win.
She leaves: you're free to date other girls.
She stays: you date other girls including her.
You win in both situations.
