I seriously don't understand how people can say that a non-edo itachi can beat Kabuto in a 1v1 fight. Kabuto is basically custom built to beat Itachi. Look at it this way.
Amaterasu? Kabuto uses oral rebirth and continues on
Fire/ Water release? Fire release is countered by kabuto's own water release, whilst the water release Itachi has shown don't really pose any real threat due to Kabuto's dodging capabilities.
Tsukuyomi/ Genjutsu? Completely useless because kabuto closes his eyes.
Sword of Totsuka? Sage mode sensing/dodging renders this useless. If he dodged amaterasu arrow he is dodging the sword. It is a manga fact that totsuka has never hit a moving target, only stationary people. Even on the off chance he does get hit, he can liquify thanks to suigetsu's DNA.
Susanoo? Kabuto has at least 4 counters. White rage to make Itachi drop it and be paralysed. Sound genjutsu from Tayaya, which he can't get out of without assistance. Bone forest from Kimi or Inorganic transmutation can be used to erupt underneat susano'o, piercing Itachi.
Izanami? Itachi literally said it himself that Izanami can't be used in battle situations. The only reason Itachi pulled it off was because he was Edo, and even then he died twice to set it off.
So quite obviously, Kabuto takes this. Kabuto counters anything itachi has, he is faster than itachi, he is much stronger than itachi, his attacks can easily overcome susano'o. He can easily makes amaterasu and genjutsu useless and is superior in taijutsu thanks to suigetsu's liquefaction techniques. His stamina is unlimited thanks to sage mode whilst Itachi has stamina problems. I haven't even mentioned Kabuto's summons since he doesn't really need them.
He is ahead in ninjutsu, taijutsu, even genjutsu (since Itachi's are useless), speed, strength and stamina all by a good margin in this match, and is either higher or equal in intellect. Itachi loses in a proper fight every time. Also if someone seriously says "Itachi wasn't trying to kill Kabuto" think about this - Kabuto was also not aiming to kill since he had to make sure not to kill Sasuke.
If you somehow think different explain properly, no fanboy crap.
