None of your "evidence" matters, its all moot and still boils down to the fact that sasuke cant see the larger picture. Or he couldnt I believe he is starting to see the light now that hes talking to hashi. The example of him wanting to kill those men in the diner because they were bad mouthing itachi is a perfect example of my point. Those men knew nothing of what really happened only what they were told by their leaders and fellow shinobi and were simply making small talk about the information that they had at the time. In fact them wanting itachi dead just further shows that most people in the village respected the uchiha and didnt think that they deserved to be slaughtered the way they were. They had been told itachi was responsible (they had no reason to think otherwise) and felt that he was a traitor. How elese were they suppose to feel? How else should they react? However sasuke thinking that they deserve to be hurt for sticking up for his clan shows the over all childish nature of sasukes character. And sasuke still wants to kill hundreds (maybe thousands) of innocent villagers that know nothing of the coup or the real reason behind the slaughter, they just want to live in a village where they can raise their children and run a business but sasuke still finds them at fault. That doesnt make him a complex character it makes him a short sighted one, one that is only concerned for HIS FEELINGS and HIS GOALS and cant see the over all context of the events that lead to itachi being talked about in that manner. HE may not liek what they said as you stated no one wants to hear a loved one bing bad mouthed but sasuke does not get to decide what people say and who they talk about. Its not his place and his reasoning is flawed
