You are missing the core of the technique...The main difference between Sharingan genjutsu and regular genjutsu is that Sharingan genjutsu is visual based. While a regular genjutsu can simply be initiated by placing your chakra in the opponent's chakra stream, a Sharingan genjutsu requires that the Sharingan be active and you make eye contact with the opponent.

First one... no it's more of a blinding tyle genjutsu. If they blind you and quickly move to an area you do not know and try to reverse it. How would you do it? You wouldn't as you would need to know where you opponent is to perform genjutsu on them. So theoratically you can't do this while blinded.I feel stupid.
For the first technique, what comes to mind is Sound Genjutsu, I feel as though Sound Genjutsu would be incapable of being reversed by the Sharingan.
For the second question, I would have a Shadow Clone get close enough to the enemy. I would first do something to obstruct the opponent's vision of me, such as creating a rampart or wall as a ruse, then having a clone go underground and emerge from the ground. Surprised, the opponent will look at the clone and chances are, the clone will be able to establish eye contact and instill the jutsu. Once done, I could either kidnap the opponent or have the clone finish them off. By using a clone, I remove the danger of being harmed due to being in close range.
I would actually use both techniques in the same way. When both techniques are instilled, for at least the few seconds, the opponent would panic. The Kouken Karasu would cause panic because of the sudden swarm constantly flying around, and the Kamihada would cause panic because the victim would truly believe, at least initially, that they're turning to ash. This would cause a lapse of their judgement, a distraction, that would make an ideal window of opportunity to follow up with a devastating attack to finish them off.
