An absolute defense offers protection from all angles and Sakura had the ability to have one, similar to both nejii and Gaara.
How she could have had a defense like Nejii:
This is the effect of Sakura's shannaroo punch. As you can see, rocks fly from all angles after she punches, which act as a defensive barrier that protects her. It's eerily similar to Nejii's kaiten, with the rocks from the punch covering a 360 degree radius. The only difference is that when Nejii uses Kaiten he can't follow up with an attack until he stops spinning, whereas Sakura can create a shannaroo rock barrier but is then free to follow up with an attack.
How she could have had a defense like Gaara:
Gaara uses chakra control to grind rocks into sand. Sakura can summon rocks with one punch and has excellent chakra control, which would make grinding them into sand easy. All she needed was a gourd. Alternatively, she could seal the sand in her forehead seal!
Probably for the best that they didn't make her anymore powerful though, I understand the spotlight has to be equally distributed between main characters.
