So many more interesting characters don't get development because of these uchiha hogging spotlight and the end result is the manga becoming a parody of itself and trash.

Because we already know their stories. Part 1 builds up Part 2. Part 2 was shit because everything was rushed and wasn't never explained thoroughly. If they expand more on it, then it would have been a better story.

More like kishi had to improvise in order to accomodate for susanoo. Kishi has admitted to making up things as he goes in an interview. Yes naruto took on kage level ninjas but he had help like gaara and dodai.

Edo tensei went to shit when uchiha madara came and became a hodge podge of all powerups. He had also the biggest number of asspulls in the manga.
