Scorch is esstially fire in a sense, just used with wind to effect moisture. Use water in large amounts and it will extinguish the heat, don't get hit by the orbs and keep your distance just in case.
Simples, avoid the explosion. Most blast jutsu involve contact with something that will detonate, keep away. Or with your hyuuga bio just spin and push the explosion away, or you can see the chakra in the blast jutsu so you can avoid it that way also.
unless it's deidara's blast release, then use lightning on it as seen in the manga xd

Weak to: Lightning and Water. Lightning can defuse the detonation process while Water itself can be used to either contain it or counter it. In the case of the specific Clay Variation of Blast Release, Fire can be used, also, to either Melt the Clay (in the weaker applications) or "cook" it, in the same way as one does with RL Clay, turning it to rock.
Strong to: Earth and Wind. Earth can't contain the explosions and is weak against them while Wind is ineffective to control or contain them.
Tracking the speak of it isn't the same as being able to react it.
Your best asset is your defence being able to rotate to keep them away from you, so you'll have no problem with swift attacks.
I've never actually been a hyuuga myself, but the answer your looking for is based on how you like to fight. If you want to use genjutsu more, sharingan is the way forwards for you. Hyuugas can track aswell, you can later go for the tenseigan, it all just depends on you. If i didn't have MS i'd go for hyuuga if i wanted a doujutsu due to the gentle fist style that comes with it, 360 vision and the tracking that come with it.
Though like i say, how do you like to fight?

Well, i can use genjutsu with my moves but Taijutsu.. i dont like to go in a cqc but still i like to use gentle fist but i use it when i get a blind spot so i won't be in danger if i miss my shot...
Taijutsu: Less than less

I perform two hand seals and send my earth chakra under you and turn it in to swamp which starts to suck you, the appears from nowhere instantly trapping you then I perform three hand seal and release electricity in shape of disks (3 disks) on at your neck, one at your waist and one at your legs which travels in a fast pace..
As the ground turns to mud, Jiraiya extends his right leg and quickly begins to spin in a kicking motion. Due to his rotation he rises up off the ground in a vortex of motion like a helicopter in the sense moving forwards in the process towards you. Then as you release the lightning he releases his kick forwards in the shape of a dragon's head that hits your lightning with equal force countering it as he lands on the edge of your swamp:

Now lets break down your move. Your first jutsu, using the swamp. That's a good start. It's hard for people to counter the swamp and attack at the same time. Though a method to doing this is:
Release a 360 blast of wind pushing the mud away from you in a tidal wave of earth/wind combo. Saves you from the swamp and sends a combo at them
Now your next jutsu, a head on lightning attack. Easy enough to counter head on attacks like this, no trouble here. If i used the wind like in my example your lightning would be useless. You need to think in the rp in this way:
If your first jutsu is earth, how will i counter it? In most cases when you use earth an opponent will try and counter with lightning.
Now under the assumtion that your opponent will always try to use the element that is strong to your first jutsu, for your second jutsu you use an element that is strong to your first jutsu's weakness.
Example:
Your first jutsu = earth
Opponents logical counter = lightning
So as your second jutsu, use wind, this will deter them from using lightning in the first place.
Example 2:
You use fire
Logical counter = water
second jutsu, used earth to attack
Example 3:
first jutsu is wind
Logical counter = fire
Second jutsu, use water to deter the fire.
Now this isn't always the case. It can depend on the first jutsu you use. For example you used swamp, most people use hurricane fist or earth pillar to go into the air to avoid in, or in this case i used taijutsu. So logically you use a jutsu that comes down from above, lightning fang for example, earth lid, sticky mud drop, wind jutsu from above, anything to deter them from going up.
Always think two moves ahead:
1. how will they counter
2. how will you stop that easy counter
