Not sure if he can use that constantly use since it's active chakra being at play with it restricting the movements of wherever is hardened. Also Kakuzu must be able to keep up with 6G Gai in order to react with Domu because if he's caught off guard by the man who blitz Kisame, I don't see him reacting.
Gai did blitz Kisame but Kisame did manage to swing his sword before he got sweet chin music. I'm pretty sure Kakuzu could form the snake seal and harden himself with Domu. I still don't know what Gai has to get past it though.
Kakuzu can keep Domu up longer than Gai can keep up the gates. He reacted to Kakashi's raikiri

and that was an ambush, not to mention if Kakuzu's hearts make it out of his body he automatically wins this. Gai can't take him down 5 times, and one ASK wouldn't destroy his body enough to make recovery impossible.

Gai dodges all of Kakuzu's attacks in the 6th Gate and manhandles the masks before torching the latter's body multiple times with Morning Peacock.
That doesn't mean he reacted especially when Minato too did manage to swing his hand before Madara struck and kicked him. Just because Kisame attacked doesn't mean he reacted especially when he couldn't finish processing a thought when Gai started attacking him. Gai already caught him by surprise and Kisame was allowed to attack first emphasizing on Gai's speed.
We're talking of this man that hasn't shown feat against someone of such a level and you're talking about him being able to form the seal and harden himself? Ignoring his Mask because their obvious non factors against Gai's speed and attack. Plus Kakuzu won't have that time to settle and resort to relaxing them before Gai kills him with full intel.
Gai doesn't have anything to get past it but if he sees it, then he'll revert to his base evading his attacks easily while Kakuzu would be the first to tire out based on their stamina ratings and considering Kakuzu's body would be restricted if he hardens it. When it comes off and if he tries to engage Gai, he gets blitzed.

Kakuzu obliterates in S1, and probably wins S2 due to Gai's lack of firepower, and I don't think he'll be able to blitz him before Domu activates.

Kakuzu can camp Domo all he wants while he's aflame by Morning Peacock. Organs begin to shut down when the body reaches a certain temperature.

His Doton affinity heart has to reside in Kakuzu in order for him to use Doton Domo, does it not?
He moved after that tank though, meaning it was deactivated :lol you can look at the scan i'm tired.
Except if Gai actually strikes Kakuzu his hand would break from the sheer hardness of Domu, meaning no one-thousand punches.
Even if you don't want to use logic because "lolmanga" its still harder to set Iron/Diamond/Earth whatever Domu is than normal human skin, not to mention it probably conducts heat a lot better.

Maybe I'm wrong here, but Domu just hardens the skin, right? It doesn't change the physical make up of it, right? So what wouldn't Morning Peacock's shockwave punches ignite it?

He doesn't need to draw contact with Domu.
Too bad Doton Domu just hardens his skin, and doesn't take on any properties of Iron, Diamond, or Earth.
Doesn't need to but hitting a stationary target he just might, especially without intel.
.........The skin changes color :lol so that's a property of something, if it just "hardened" it there would be no physical change at all.
Especially when we've already seen his body literally smoking
