Why it was Kaguya who ate the fruit.
So we know that kaguya had her byakugan before she ate the fruit. I believe that she was the one to do it because even though back then there was no one with chakra, people could still have had their chakra networks. That being said, Kaguya was capable of realizing the existence behind this whole system even though it was inactive.
Now, I don't say that the Demon we saw with its rabbit-like form has nothing to do with her, it was what drove her to do it. However, I believe that the Demon tempted Kaguya once the latter started to realize the existence of that secret force: ckakra.
The very fact that the fruit is supposed to have the chakra of the whole world means that someone with the Byakugan could potentially see this energy. The difference is that no one till then had made the connection between fruit's chakra and human's inactive chakra network.
From a religious point of view, the demon tempting Kaguya like that would make sense. I mean all the other people who did not have the byakugan, might have regarded the tree as a god but they did not have any actual knowledge of what its fruit really was. It was more like a sacred, untouched deity if we can say so. But, in Kaguya's case, if we accept that she succeeded in decoding what that fruit could do to people, then it was all up to her to decide whether or not she would grab that power for herself or would leave the tree untouched. It was at that very moment when she became confused and started to wonder what was correct and wrong. Her confusion was what helped the demon into manipulating her.
How the above is connected to the new movie
Till now Ashura's and Indra's reincarnations caused a continuous war between their transmigrants. That very war was what made Hagoromo stuck around to see the end of each war and whether or not that circle of hatred between the siblings would ever end or not. For that reason we can say that we have 3 spirits, Ashura's, Indra's, and Hagoromo's who can't find peace, the former two because of the never- ending cycle of hatred, the latter because he tries to fix what he considered as his mistakes.
I think it's safe to say that Naruto and Sasuke will stop this circle and so Ashura's and Indra's spirits will finally rest in peace. Now this is a long shot but I believe that because of that, Hagoromo's spirit, finally happy with the end-result will stop to interfere with current world's things. However, his absence might work as a catalyst for the moon which was his creation, which, freed from his powers, will no longer be capable of remaining at space.
Thus we have this sudden fall of the moon that we know based on the new movie.
The reason Hanabi is kidnapped
Now you might not remember it but Hanabi is the heiress of the Hyuga clan. (It is said so in the first databook page 110).
Unfortunately I don't have a databook so I will post the page in which Hinata's father tells Hinata that she's useless, or at least she's below her sister.
Neji who was considered superior of both Hinata and Hanabi ( I don't think that he was stronger than their dad) is now dead.
Neji ofc, could not become a heir because of not belonging to the main branch. So Hanabi, who belongs to it and was considered stronger than Hinata, could have been the best candidate for heiress. Now, things may have changed through the war with Hinata's status but we can't be sure.
What I would like to point out is that being capable of using secret attacks that are known only to the main family, is not considered the same as having the knowledge of main family's secrets. What I'm trying to say is that if hypothetically main family was all about secrets in techniques, then Neji, if he had unlocked them on his own, there would have been no reason not become a heir as there would be nothing to hide from him.
Thus, main family's secrets exceed just power and is more about actual knowledge.
Considering now the timeskip that will follow for the new movie, it's safe to assume that Hanabi became a heiress either because her father continued to believe that she was superior to her sister or because Hinata potentially turned down the position for personnal reasons (not agreeing with main family's ways).
Whatever the reason may be, it's highly possible that Hanabi in the new movie is the heiress of the Hyuga clan and if not, then it's still possible that she has learned the secrets of her clan as the next in the line for the position.
We already saw that the new villain has the byakugan but he does not belong to the Hyuga clan (his symbol resembled more Hagoromo's clan but I might be wrong). I would go by saying that he either is Hamura's child or descendant or even Kaguya's husband who like her was immortal.
Now all we know about house branch is that their purpose was to protect "main family's advanced bloodline".
However, the importance of advanced bloodline might be extremely litteral, not just dojutsu. This man can actually be the one who started the hyuuga clan as it's known in the modern times with the main family and house branch.
I believe that the Demon rabbit, having lived for ages inside of kaguya, developed some kind of compatibility with her bloodline. Maybe the Demon rabbit cannot use as a vessel a hyuga unless that person possesses extremely pure blood much like Kaguya who was a princess.
For that reason I believe that this man will kidnap Hanabi and will try to force the demon spirit to take control of her body now that the demon spirit came finally out of Kaguya.
You may ask why he didn' try anything with kaguya's revival. Well I don't think that he wanted Kaguya to stay. She was too powerful for him. However, if he manages to put the demon spirit inside of Hanabi then I believe that he could easily control her, who knows, he may even know how to put a curse-cage mark on her to keep her under check. Basically, he may not be the correct vessel for the demon spirit and so he tries to control it indirectly by controlling the suitable vessel.
By doing so he may be granted with some extraordinary powers or knowledge.
Anyway, the latest parts might mean just a prediction but I believe that there is somekind of relationship. As for the reasons the Demon chose Kaguya, I'm more sure.

I believe the Hyuga is the royal bloodline of the Ootsutski and the byakugan is a celestial dojutsu which don't see part of the juubi aka the holy fruit.

Here In Viz Translation Hiashi even refers Neji as a "Divine" Shinobi and that goes saying something about "Aliens"
