I knew people were going to use susano... do you think susano is unbeatable? minato could summon a toad over susano and others to help him break it

Itachi being arguably the greatest user of shuriken jutsu known in the manga , can easily deflect and redirect every one of minato's flying thunder god kunais'. Not only is itachi a greater user of projectile skill than minato, but minato's kunai are oddly shapped and heavy, which will make them harder to throw.
Minato's reactions seems to be on par, if not above 3 tomoe sharingan levels, so are itachi's, as seen here.

From here, Itachi can either successively prepare and implement inzanami, (which minato has no knowledge of, and thus will be rendered unable to escape. Or he can trick minato by injuring him with a explosive clone. (which Itachi has shown to be able to use without even a sharingan user like sasuke differentiating the clone from his physical body.)
As for Minato's Frogs, Itachi can control them with genjutsu. As sasuke has proven below, it does not require an MS Technique.

As far as direct genjutsu, this puts minato at a extreme disadvantage. Yes, he was able to defeat obito, but at the age of 14, he had barely had his sharingan for a year, while Itachi has had it from at least age 8. Even those who had it for much longer such as the police force officers paled in comparison to itachi's speed and perception. Itachi often can catch, even an intelligent opponent in a genjutsu at any time during the course of battle, and is a great hindrance, even if Minato can successively counter some of them.
