Zabuza lost because he was intimidated by the sharingan. Besides, just because someone is stated to be the same strength as another, doesn't mean that it will end in a draw. Matchups and different tactics, this could go either way.

Part1 Kabuto went toe to toe against a Sannin. Of course he is better then Hidan.

But it was stated Part1 Kabuto is on the same level as Kakashi was.
