Hashi almost certainly knows a sealing tech to disable Enma from being used if not, he's strong enough to equal Enma in combat (I do believe the first and hashi have equal strength or the first is stronger). Not only is he strong, but he's fast as well. Hiruzen knows over 1000 jutsu, well the senju are also know for know an incredible amount of jutsu, so the number of jutsu known is irrelevant in this case. I'll give you enma as a diamond staff over his wood release because it was shown that his staff was able to break through his wood (lol).It doesnt have to come down to stamina

Plus you forgot Hiruzen and Enmas taijutsu is way more better than Hashiramas
Plus Hiruzen has over 1000 genjutsus and ninjutsus only seen less than 5 though

He knows not to use so much chakra to where he would run out 1st
Cause Hashirama is most likely going to be using most ninjutsu(Wood release) while Hiruzen can slowly close in on him for taijutsu combat
As for the pollen Hiruzen can get Enma to turn into a cage to stop the pollen from reaching Hiruzen

Wow. Hashi was a brain washed zombie controlled by oro. Hashi doesn't just use ninjutsu he also is proficient in taijutsu, kenjutsu, and genjutsu and I'm pretty sure he has some knowledge in fuinjutsu. Lastly, turning Enma into a cage won't stop pollen from seeping out seeing as a cage has openings on all sides.
