Itachi was on the brink of death with little chakra left. There was nothing he could do against Orochimaru's 8 headed Hydra without Totsuka or Yata.

Both Sasuke and Itachi tried to grab Kabuto with Susanoo and he escaped via Oro Rebirth. Orochimaru can do the same.

Not only that but Orochimaru survived being cut in half and beheading.
