Itachi isn't the only one that has been called invincible. Nagato, Madara, Kimimaro, Hanzo, etc. have all been called invincible or unbeatable. Hell, Itachi called Obito invincible, even though he believed him to be a weakened Madara. Itachi's own words: Obito > Itachi.

The diffrence is that Itachi was called invincible by Black zetsu, the will of Kaguya. He has been around for 1000 years so he has problably seen all jutsus and weapons that existed, and he called him invincible.

Edit: And by Obitos own words, he would be defeated by Itachi if he had known about him, so that says Itachi > Obito.
