Because a tree is an actual LIVING thing. Hashirama basically turned chakra into LIFE. You'd expect someone like Mei with 2 KKGs to be stronger than Mokuton. Especially since she had lava and steam. There was a guy who had a blast KKG. There was even Kidomaru with bone KKG. But in the end, Mokuton ended up trumping them all. Guess in the end, Hashirama is actually using a life which covers the ENTIRE earth! Trees are everywhere! He can make roots pop out anyplace, anytime, turn them into any shape, any size, etc. The grand scale on which he can use it is too powerful.

I think that it is more the fact that.. Wood, plants etc is life it self. Like, when a tree grows, it is full of life and natural energy. So to be able to grow forest's like Hashi, it means he can create so much life and energy, meaning is life force + chakra must be ****ing amazing.

Trees are important in Japanese culture and society so it makes sense that Kishimoto would incorporate tress and plant life in the world of Naruto. Pine(Matsu),Cherry Blossom(Sakura), Maple (Momji), Plum Blossom (Ume), Bamboo (Take) and the most well known the Bonsai..Trees are one of the most important things to human life for a shitload of reason i won't go into.
