Most jounin dream of becoming like Kakashi. Kakashi isn't a normal jounin, Darui isn't a normal jounin, neither is Gai.
If we were to only base Kurenai on her one fight with Itachi that's not really fair in the slightest. I mean Itachi is dead and fighting a Sage right now, that's not an ordinary shinobi.
Here's how I see it there's a few tiers of Jounin.
Fodder jounin-they're eliete in the sense they can beat fodder chuunin, special jounin etc and they have skills enough balanced to be considered elite. These consist of nameless jounin all throughout.
Regular Jounin-I'll put Kurenai, Asuma, Darui, Kankuro, and Temari in here They're strong and we get to see it more often and they can beat most people and deal within a team against Akatsuki members but would get merked individually.
Pseudo-Kage badasses-Kakashi, Darui, Gai, KB. I consider KB a jounin because he had students and he's too much of a beast not to be one. These are people who could be Kage if they wanted (their village wanted) These guys could toe to toe with some Akatsuki members (as seen by all the mentioned)
What you guys don't understand is that just because we don't see much of Kurenai doesn't mean she's weak or anything. Using her fight with Itachi as our only grounds knowledge on her isn't fair even if we don't see much else of her. She's a jounin, if she wasn't pregnant for all of Shippuden we'd see her do more, if the first series had important for her we would've seen her but we didn't so we can't really speak much of her. I say let it go and just trust that she's probably the best genjutsu user under the Mizukage and Uchihas
