Coming from someone who writes short stories as a hobby (I share them with a few people and get both good and bad comments), there are a few problems with a lot of people's complaints, mostly due to the fact that people seem to think that writing is a piece of cake. It's not.

1) If you kill off any main characters, it has to be either epic or important for emotional reasons, otherwise the fans will scream their disapproval and ratings will drop drastically. (I personally find it difficult to kill off characters in an effective, but non rage inducing way. For me, it has to be injury or disease oriented). Kill off a character badly, and you completely lose the audience.
2) The whole friendship power up can be compared to an adrenaline surge that is triggered by an emotional response to the presence of people that your conciousness considers to be important. So in short, science. Ever hear of those mom's who lift cars off their children? Same kind of deal here.
3) Considering that the target audience is mostly teens and young adults (likely with a large number of preteens that read/watch it), there are certain lines that it is inadvisable to cross. Blood is fine, even some (or a lot) of fanservice, but it's not like we get shown guts in the middle of a decapitation. It just might cause some serious censoring issues.
4) You don't kill the main character until the series is or is almost at its end, otherwise you lose most of your momentum for moving forward with the plot. Main character, if they must die, does so in a final battle, or soon afterwards, or in a rare case, in a long timeskip forward that shows them dying of old age. The problem with killing the main character early is then which other character do you follow around for the remainder of the series, and does it make sense to do that.

As for complaining about Natsu having plot armor, generally that's what happens with the main protagonist. No matter how many times they get beaten down, they get back up. Although admittedly, Natsu has had some times when he doesn't get back up for a week (remember when he ate etherion?). So anyone who can't handle plot armor should stop reading shonen manga. Although, at least most of Natsu's plot armor is within the realm of reason when one considers the kind of magic he uses. And might I remind people that he also has access to Laxus' magic, and yet again a reminder that fire and lightning are two very powerful forces of nature, there is just no getting around that.

There is no story that will satisfy everyone, that's a fact. But remember to consider the thought that the author has to put into this so that the story actually has coherance and cohesion, both are important, otherwise the story either becomes incomprhensible, or just falls apart.
