As a raised Catholic I've always interpreted Adam and Eve as a metaphor.. But it's not the main thing in my opinion
I feel the same exact way about most things in the bible. Things that seem illogical or impossible simply didn't literally occur, but were some form of metaphor. Jesus didn't really walk on water, or turn wine into water, as those things are impossible, but in some way it symbolizes the actual occurrences. Maybe turning wine into water from symbolism for turning simple ingredients into some sort of cure, as he was a great healer. He didn't just bring people back to life using some unidentified power, but as an amazing doctor he probably healed people with secret potions and concoctions that allowed people to walk or see again. Maybe the snake that pressured Eve to eat the forbidden fruit was just a symbolism of temptations, and the fruit she ate symbolizes how she gave in to such temptations. My pastor never takes things literally from the bible when he preaches, he translated them into a more sensible version, explaining how they apply to our modern times.
