Which characters have never been defeated?

Hashi died in a war and Kabuto killed Itachi multiple time in their fight

Idk about undefeated but some have some pretty impressive records.

Obito: 4-1
Madara: 7-1
Hashirama: 2-0
Minato: 3-0
Itachi: 6-1
Nagato: Practically soloed a whole village.

Don't forget Chiyo soloed a castle, whilst Sasori soloed a whole country

Minato didn't lose against tobi,the battle was over when tobi ran away,the sealing of kurama wasn't part of the fight,because he could have let the fox go after he teleported it away from the village,yet he didn't want the fox in the hands of tobi again

Itachi- for those of you who say he was defeated by sasuke, you are WRONG. He died to give sasuke his powers and to force sasuke to release oro's power by pushing him beyond his limit. Itachi never faught to kill sasuke.

Hashirama- Apperently he faught madara and 9tails and won, so thats pretty crazy but doesnt mean he lost when he was a child. so as far as we know, he's undefeated.

So6p- unknown and undefeated as far as we know.

3rd raikage- Never lost, he pretty much killed himself with his own attack.(lol)

Minato- He wasn't defeated by 9tails or obito, he died to give kuramas power to naruto so he can defeat obito in the future. and he also died to protect naruto from the fox.

He died the exact same way Itachi died; succumbed to illness in the midst of battle.

Gaara & Lee were cornered & helpless just like Sasuke.

but.....lost the fight as a result. He lost the battle. He did not win.

Depends if you go for 'fair' fights or not.

Minato crushed Tobito, but was only defeated later because of the fox.

Deidara couldnt' get close to Gaara without almost blowing up a village

Speaking of Gaara, he had to look after Lee when he fought Kimimaro

Itachi would've crushed Sasuke, but didn't because of reasons already explained.

So...yeah. Depends on your perspective.

he died in a battle before 1st shinobi world war, and was sealed by hiruzen/. he actually has one of the worst battle records so far. only one known victory

still lost. he died and sasuke didnt. itachi didnt choose to die like minato as he had no choice but to fight or hed eventually die anyway of his illness. chakra depletion as a result of sasukes actions ended his life as well as blindness he suffered as a result also of sasuke. how many fukin battles have not had the intent to kill? a lot. but for some reason him not intending to kill sasuke excuses his terrible performance. pushing sasuke to the limit = beating him to near death and trying his hardest to do so

Masked Man got what he wanted, his attack resulted in the hokage of the hidden leaf and the ninetails jinchuriki dying, he messed up the village pretty bad, killed a lot of ninja and caused the suspicion of the Uchiha which ultimately lead to them being murdered. If you call Minato sealing a demon fox inside his own son a victory, it's not- it was more of a resort. Minato went out like a boss and the Masked Man may have had to retreat but the Masked Man ultimately won.

Minato won vs Tobi and choose his destiny vs kyuubi for the sake of the future/Naruto/village. He could have easily survived if he choose another path.
Tobi had 3 goals, the Uchiha massacre, destroying the village and keeping kyuubi... How he only achieving 1 of 3 goals you consider a win, yet Minato goals were saving Naruto, saving village keep kyuubi, save Naruto and wife, and he achieved 4 goals out of 5 was a lost

Itachi think never really lost either, considering that fight with Sasuke was his choice to loose.

Hashirama never lost either, until we know how he died that is.

But from what we've seen or heard about, Minato, Hashirama, SO6P and Itachi. But i don't know if we can really say everyone who has never be defeated since if we think about it, even Iruka, Darui or others have never been defeated on panel
