Bebop. I can watch it and rewatch it 1000 times as an adult and never get tired of it. But in terms of 1 off experiences FLCL. That show was so serious yet so not.

Can't name just one. The ones that affected me the most were:

Neon Genesis Evangelion;
Ghost in the Shell;
Code Geass;
Ergo Proxy;
Serial Experiments Lain.

I'd also add Naruto to the list, but purely because I've been following it for over 12 years and now I have strong nostalgic feelings for it. I wouldn't recommend it to anyone nowadays tbh.

i wouldnt recomend to the new generation either. id probably set them up with boruto then have them go back to kids naruto. like when i have son hopefully ill get him to watch anime like his pops

That anime started really good but after episode 4, it just became meh. I really like the hidden messages (AFAIK, someone in the YT comments section was explaining the meaning of each episode, really good for the first 4 episodes).

Episodes 1-4 are a study of individual character, 5-7 focus on the investigation, 8-10 show us the world outside of the previously established characters, and the last 3 constitute a closing arc. So if you are in it only for the first four episode then you are going to miss a lot. Though given the time and efforts it takes in taking it all in, it's only for the people who really are in to this genre.
