What would characters be without Kekkei Genkai?

Well. They would have been designed differently. These chracters were made to use their KG, taking it away from them is like taking away TB chakra from naruto.

To answer your question without KG sasuke and itachi will still be at least high jonin and in itachi's case low kage level. Without their KG, all those who have KG, will certainly be weaker than themselves with their KG but by no means fodder level.

-Lightened boulder jutsu is extremely hax (lifted turtle island with one hand, stopped a meteor)
-Weighted Boulder (inverse of lightened boulder, can be especially useful in immobilizing boss summons and is very hax as well)
-Several other earth techniques

you can't take oonokis jinton away because it isn't a kekkai genkai passed thru blood its a technique that mu put hard work and effort into making and oonoki trained hard to learn.

if sasuke doesn't have his sharingan he never learned chidori because kakashi never perfected it and so he doenst have kirin or any of his current lighting jutsu which are all variations of chidori
