Maybe Yamato didn't change because He isn't ENTIRELY made of Hashirama's cells and still have his own DNA ... while on the other Hand ... Zetsu is ENTIRELY made of Hashirama's DNA..

Yamatos Mokuton changed, i´m sure that he would change too had naruto rikudo-mode made contact with him like he did with the Zetsus
