GG means "good game". I'm pretty sure it originated in online games without voice coms (Starcraft, Dota, League of Legends). It's just a sportsmanlike acknowledgement of the competition between opposing teams. It isn't really significant.

It is often used preemptively in the middle of games to state one's belief that the game is already over because they are so far ahead/behind.

Going in a game with a random fool and winning on him, doesn't really work well, unless with a friend. Maybe then to create some easy atmosphere between the two.
