Besides, it was Kurenai's genjutsu that was shitty enough to be broken, Itachi simply reversed it back on her. He didn't use a single genjutsu against her.

Yes, Itachi didn't use any Sharingan Genjutsu on Kurenai, and there was no intent to kill which means a lot easier time breaking out. Not that Itachi had much intent to kill Orochimaru at the point in time if he was going to run away...

It was a simple paralysis jutsu he used on Oro. I think the Sharingan just helped amp it's effects. The Naruto Wikia ranks kaanshibari no jutsu as a D-Rank genjutsu. Source of that info comes from the First Databook.
