Because the Hyuga were irrelavant to the plot. They were just one of those regular clans living in the village. The story was centered around the Senju and Uchiha.

It wasn't centered around the Senju. They didn't even exist in part 1. They were just retconned plot device to make the Uchiha more important to the story.
