I can't find the scan before but Mei was worried because he jutsu wouldn't activate in time.

This.
The fire is intangible as I know, so she definitely used the shockwaves created by her swing to disperse it.

I do remember that, and I just rewatched it. This does prove in close combat her suiton would be too slow most likely. However, Tsunade didn't deflect it with the force of her arms, she had to physically hit the fire stlye away with her arms. I know this because after deflecting them, a scene showed her in pain with scorch marks on her arms where the fire style hit them.

Well the fire obviously hit her, but tell me something, how can someone hit the fire away with sheer strength? =D It is intangible.

I don't F*cking know, but it obviously happened and is possible. This is a show about ninjas with superpowers. In all seriousness though, I'd say if you coat your arms with chakra like she did and strike with enough force, it is possible to deflect "intangible" attacks like those made of fire. Although, it seemed like a desperate and reckless move, considering her arms were still burnt badly.

That scene was always confusing for me given that I still don't know what technique Mei was trying to pull.

I mean, it's obvious that it isn't Hidden Mist Technique nor Water Pillar (Given that we see and, according to the Databook, Water Pillar ). I would think that it's a Water Dragon, but Mei doesn't seem to need hand sells in order to active it (when she use it the first time in the fight against Madara ).

When Mei faces off against Sasuke and Karin initially in the 5 kage summit meeting room, Karin manages to jump out of the way I think

I actually rewatched that, and Karin didn't really dodge anything cuz she wasn't even in the range of the attack.

Look at the chair and then look it , you can see that, despite that the chair is closer to Saski-kun than Karin, the stream of lava barely touches the chair (which is worse, it doesn't even move it despite that the Stream had the enough blunt force to knock Sasuke's V1 Susanoo against the lava wall)
