The technique is quite vague on why you can use either one or two hands but since it doesn't state anything about being able to release multiple waves I'd say it's just cosmetic. As for how you described performing it, it's not a thin wave which only cuts. See it as a wave of blowing winds mixed with sharp winds.
Also, mid range really isn't a disadvantage even if they would move into long range to avoid it they'd still have to use a technique to do so.
No, the sword won't be coated beforehand you just release the wind as you slash which is basically the same as you do with the previous technique but instead you do it with a sword in hand. If a technique doesn't state it actually coats something it essentially doesn't.

This technique can only be used with a fan, to learn it use mine *throws you a giant folding fan* infuse the fan with your chakra and wave it across infront of you, then as you wave it across release the chakra into the wind currents created by the fan's movements and shape it into a single spinning disk of sharp wind, resembling a demon wind shuriken. Pretty straightforward.
This technique is a combination of bukijutsu using the fan to attack your target physically aswell as wind release *creates a clone* dash towards my clone holding the fan in hand and strike him with it, sending him flying from the blunt force impact then wave the fan across and release from it a blast of wind pushing the clone away even further while the blunt force of the blast also deals some damage. If you ever find yourself in close combat with an opponent while holding onto a fan this might come in handy.

Dosu nearly fumbles the giant fan as it is thrown at him. He wasn't used to handling such a thing in battle. He grabs it firmly and begins to look at it with care, trying to figure out how it works. After doing so, he begins to pour his chakra into it as he swings it from left to right. As the large fan begins to turn and churn the air currents, Dosu releases his wind chakra and infuses them. As the currents are infused, he shape manipulates them into a singular disk of sharp wind that takes the shape of almost a windmill shuriken.
The con to this technique is that it requires a fan, and it's not something I really use in battle, nor ever have for that matter. A plus is that it's a large weapon so it can be used as a feint to strike your target in close range and at the same time, releasing the disk of wind as a surprise attack. Since it manipulates the air currents created by the fan, it wont be coated int he fan so the target will have less time to know what's happening if he is close. Aside from that I can't say much else without repeating what I've said in the past like hand seals, or range. *Stops to hear the second explanation.* Ironically enough, this next technique seems very similar to the method of use that I might have done in the future with the first technique.
Dosu firmly grabs the large fan with both hands, having his left hand on the lowest portion of the fan as he starts to dash forward at fast speeds towards the created clone. As he nears the location of the clone, Dosu begins to draw the fan back towards him on the side like almost a baseball back. He then continues by swinging it with great force forward in a horizontal fashion. Almost before making contact, Dosu makes the fan move upwards slightly, aiming to strike the side of the clone's ribs, using their right armpit as a stepping stone to send them flying easier, using it as a natural hook of sorts. As the clone is sent into the air, he swings the fan in the opposite direction, bringing back towards him whilst focusing his chakra on the created wind currents, refining them and creating a blast of wind that further damages the clone and pushes them backwards.
The good thing about this technique is that it first deals damage by using the fan as a weapon. However, this means that the target can also defend against my "Wind" move as I use my fan to deal damage, so he can potentially defend against my attack with simpler things like taijutsu or kenjutsu. Aside from that, its good that the next blast pushes my target if I manage to send him flying. I can use this technique in combination if I use a fan to defend against something.
