Lol she can't use her rebirth jutsu when she's getting pounded like crazy. Guy would kill her before she ever had the chance of using it. And Guy doesn't tire out from using the gates as quickly as Lee does. This has been shown several times in the manga.

And Kisame is extremely durable and Guy wasn't even trying to kill him, just capture him. Guy constantly punching and kicking her time and time again would kill her. If you really think she can tank all of Guy's attacks while using the gates then you have some serious comprehension issues.
