I notice you are missing an essential possibility in your poll. The option of, 3 sannin annihilate Itachi....
Most likely Oro would die along with Itachi. Tsunade and Jiraya live but have little chakra left

No one knows how powerful Itachi really was. Mainly because his one major battle that was seen from beginning to end was his battle with Sasuke. But, since he wasn't fighting Sasuke with his full strength, we'll never know for sure.

Itachi was my most favorite villain ever...even though he really wasn't one to begin with...

I think you're overestimating Itachi waayyyyyyyyyyyyyyyyyyyyyyy too much. Jiraiya almost killed Pein who is by far Itachi's superior in strength. (don't say otherwise ) Jiraiya could own Itachi and Itachi cannot stand up to all 3
