Earth jutsus as defense are pretty straightforward... They get hit with stuff go that you aren't hit with stuff. xd
So let's first talk about Earth jutsus as offense.
Typically, offensive earth jutsus take advantage of the fact that earth is all around us. We're constantly standing on it. So, why not create spikes beneath the feet of an opponent? Why not a swamp? Alligator jaws around your opponent?
These jutsus can be very useful, but they're usually misused. In order to teach you how they should be used, I'm going to tell you how they shouldn't be used.
Keep in mind that these "ways in which they shouldn't be used" are not always reasons to not use the earth jutsu. Perhaps you WANT your opponent to block the earth jutsu so that you can follow up with another jutsu.
1. Being used as a flat-out attack alone. Say I use an earth jutsu to create spikes beneath your feet. That's pretty easy to avoid, and it's pretty easy to know it's coming - you made the handseals for the jutsu, and the earth beneath my feet likely rumbles. I could just jump up into the air, or just use Chidori Nagashi as the spikes rise. Pretty easy to counter, and countering it doesn't put me in a difficult situation.
2. Being used while your opponent is standing on the earth. This one's a little bit counter-intuitive. But if I'm standing on the ground, and you make a swamp beneath my feet, I can just walk on top of the swamp. Or, if you make spikes beneath my feet, it's kind of easy to tell they're coming - rumbling. However, if you use the spike jutsu while I'm falling down to the ground (and perhaps if I'm not looking at the ground) then not only will the damage of the spike jutsu be increased, I also won't be able to tell it's coming as easily. The same thing goes for the swamp jutsu.
3. Not being used at all. A lot of people avoid earth jutsus as offense just because they're usually pretty easy to avoid. That's just because they don't know how to use them effectively. But they're right now to use them: like all jutsus, earth jutsus should only be used if you know how to use them effectively.

ok...here is where you come in...how would i counter if i attack w/ a wind jutsu followed by a offensive earth jutsu and he counters w/ UFP? man i hate that jutsuYup. That's one good way to use them.
First use an attack that moves from you to the opponent, and then use an earth jutsu that attacks the opponent at his location. Not only will he be caught off-guard, it'll also be virtually impossible for him to defend against both. So he either has to use a particularly powerful attack or he has to somehow get away from the jutsus - underground fish projection ftw lol xd

If you react fast enough, UFP can be countered with jutsus like Swamp of the Underworld or Ant Lion that cause the earth that the opponent is in to be destroyed. When your opponent is underground, he can't move any faster than he can above ground, so it's just a matter of reacting to UFP quickly enough. Conversely, you could always use a wide-spreading lightning jutsu to tear through the ground and hopefully hit him somehow. And depending on the offensive earth jutsu that you use, he might not be able to use UFP at all - I don't believe he can UFP into an Ant Lion.
I don't think that you could mold your wind chakra into the earth spear in the first place. Typically, when you charge wind chakra (or any time of chakra) into a weapon, the weapon has to be made of a special chakra-conductive metal (you can charge chakra into standard metal, but only in small, inefficient amounts). Standard metal isn't very chakra conductive, and I don't believe earth is either. If I had to hazard a guess as to what would happen if you molded wind chakra into the earth spear, I would say that the earth spear would break apart.
However, if somehow you WERE able to mold wind chakra into an earth spear (which you can't), then it would become resistant to lightning. The wind chakra would provide a protective outer (and, theoretically, inner) coating to the earth spear. So, any lightning about to hit the earth spear would first hit the wind chakra, canceling the lightning out.
O_O...Ummm, well you've seen the threads that I've made in the Iwa town section about tactics - I don't want to repeat all of that stuff here. xd
Tip: Don't be afraid to use B-rank, C-rank, and D-rank jutsus. If they work in a useful way and if they can help you set up combos, then they should be used. There are a LOT of jutsus, and most are below A-rank. Don't limit yourself to the tip of the jutsu pyramid.
